On October 14, 2015 Concordia Dinning Services hosted the first ever Sweetest Day Event, to support the holiday coming up that is celebrated on the third Saturday of October. The history of Sweetest Day is a legend that it was invented in 1922 by Herbert Birch Kingston. Kingston was from Ohio who worked for a candy company and wanted to bring happiness to those who were not in a relationship.
Concordia Dinning Services brought this event to life through a four course meal, that was prepared open kitchen style to our guests. This was a great opportunity for the guests to learn more about how meals are prepared, presented and served in a high end restaurant setting. Chef Joe Geen and his culinary brigade including, Chef David Brian Goc, and General Manager Joe Burdi dazzled the guests with their impressive cooking techniques and amazing plate presentations . The tables were dressed in white linens with china service ware that added to creating the fine dining ambiance. The evening was complete with Crystal, an experienced server who has been involved in a variety of upscale events. She was very knowledgeable and was extremely eloquent as she served us course after course. Not only were there servers and Chefs but also part of the team were Nixa Sanchez, restaurant hostess and Maître D’, Sofia Quirk. They both were instrumental in creating an inviting, comforting and an overall fun evening! The four courses included a starter of a Roasted Butternut Squash and Pear Soup garnished with lime crema, mixed green salad with Michigan apples and oven dried goat cheese dressed with a raspberry vinaigrette. The entree was a Pan Roasted Breast of Chicken stuffed with Sun-Dried Tomatoes and Ricotta Cheese, Smoked Gouda Red Skin Mashed Potatoes and a Pesto Cream Sauce. The meal was capped off with a dessert of a Homemade Puff Pastry and Baked Apple “Flower” with a Vanilla Crème Anglaise. Those in attendance enjoyed the meal immensely.
The students in attendance were groups of friends who wanted to enjoy a restaurant style, type of atmosphere. The most common thought was that it was a fun, cute, idea and would like to see it in the future from the students. The overall experience was a pleasant and peaceful environment to showcase a culinary experience while providing the guest with a bit of education on the inner working of a professional kitchen setting. General Manager Burdi stated that, “Tonight seemed to be well received and showcased the talent that our Chefs have. This was also an opportunity for students to try high end catering dishes in a restaurant environment.”
Both Chef Geen and Chef Goc stated, “I had an enjoyable time and it was fun to cook for the student and see their faces as they enjoyed it. It is a form of entertainment for us.” Everyone at Concordia Dining Services hopes to see you next time”.
